In this class we will explore some of the underdogs of the produce world. There was a time when the only root vegetables anyone paid attention to were carrots and potatoes. Turnips were déclassé, celeriac unheard of, and beets are a pain to clean. Those perceptions have changed. If you’re going to eat seasonal and local, you are going to eat roots in winter. Learn how to cook them to perfection and get to sample the recipes demonstrated during this class.
